March 22/9 is a day of remembrance of the Holy Forty Martyrs of Sebaste


In Russia, it has long been customary to make an oven-baked dessert "larks" - buns in the form of birds - on the day of memory of the Sebastian martyrs. Why larks? Peasants, paying attention to the fact that the singing lark then soars upwards, then falls "to the ground" like a stone, explained this with the special boldness and humility of these birds before God. The lark quickly rushes up, but, struck by the majesty of the Lord, leans down in deep reverence. So the larks, in the thought of our godly ancestors, represented a song of glory to the Lord, exalted by the martyrs, their humility and aspiration to the Kingdom of Heaven, to the Sun of Truth - to Christ.
